This meal is one of my entertaining staples, its perfect for a large group because there’s very little prep and very little cooking time…leaving you where you want to be: socializing with your guest’s. The tender fillet is complemented beautifully by the rich, buttery, sharpness of the Gorgonzola sauce. You will not be disappointed with this meal.


  • 1,5 kg beef fillet, trimmed & sized
  • 250g Salted butter
  • Salt & pepper

Gorgonzola sauce

  • 300ml double cream
  • 250g soft, blue cheese (I use a mixture of Gorgonzola & Cremazola)
  • 100g Parmesan, grated
  • Salt & pepper


  1. Preheat your oven to 240ºC
  2. Trim & prep your fillet . Place it in a roasting tray, pat dry & leave out to get up to room temperature. Whilst it’s coming to temperature, start with your sauce
  3. Add the double cream to a small saucepan & bring to the boil. Lower the heat & simmer gently for 10 minutes, stirring occasionally
  4. Add the blue cheese to the cream. Stir & allow to simmer for 30 minutes
  5. Season the fillet well with salt & black pepper & then coat the fillet with a thick layer of butter. Place the tray in your now VERY hot oven. The fillet needs just 30 minutes. Baste regularly
  6. Back to your sauce, add a small handful of grated Parmesan & check for seasoning. The sauce should have thickened up beautifully
  7. Remove the fillet from the oven. Place on a warmed serving dish & cover tightly with 2 layers of foil. Allow the meat to rest for 10 minutes before serving with the Gorgonzola sauce
