The best thing about this recipe, besides being incredibly easy & fast, is that you can use any combination of fruit you like! I happened to have golden delicious apples, pears & blueberries in the house but granny smith apples, plums, peaches, apricots, blackberries or raspberries would be equally as delicious! Use 1kg of fruit in total for this dessert, the ratio is completely up to you. Served with a cool scoop of vanilla ice- cream, this is an instant classic.


  • 4 golden delicious apples, peeled, cored & chopped into chunks
  • 2 pears , peeled cored & chopped into chunks
  • 200g blueberries
  • ½ cup caster sugar
  • 2 tsp vanilla extract
  • juice & zest of 1 lemon


  • ¹⁄³ cup caster sugar
  • ²⁄³ cup coconut chips/flakes
  • 120g butter, melted
  • 1 cup plain flour


Preheat the oven to 180 °c

  1. Mix the fruit, sugar, vanilla, lemon juice & zest in a large bowl & mix to combine. Allow to sit whilst you make the crumble
  2. Place the sugar, flour & coconut chips in a large bowl. Pour over the butter and mix, you will have a soft dough
  3. Pour the fruit into a pretty, shallow baking dish and break the dough into small chunks all over the fruit until you have an even coating]
  4. Bake for 20-25 minutes until golden & bubbling
  5. Serve warm with a scoop of ice cream
