I came about this recipe on the internet one morning and was very skeptical. I mean, it just seemed impossibly easy. Well, I have been schooled. The ridiculously smooth result of this simple process is so good, your family will never believe that you made it! The best part of all is that there is no limit to the flavour possibilities!  From simple vanilla ( use the seeds from a spilt vanilla pod & ½ tsp of salt) to Amaretti ( 1 tsp of almond essence, crushed amaretti biscuits) to Turkish delight ( 1tsp rosewater, chopped pistachios ) to cookies and cream (I don’t have to explain that do I?  Oreos ) , you are the master of your ice cream universe!


  • 500 ml cream, chilled
  • 1 tin condensed milk
  • ½ cup good quality cocoa powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 cup chocolate chips


  1. Whip the cream until stiff
  2. In a separate bowl beat the condensed milk with the cocoa , salt &  vanilla extract until smooth
  3. Fold 1/3 of the whipped cream into the condensed milk mixture
  4. Fold the condensed milk mixture into the remainder of the whipped cream until well incorporated
  5. Transfer mixture to a chilled, metal loaf tin , cover tightly with 2 layers of cling film & freeze for 2 hours
  6.  Remove from the freezer & mix in the chocolate chips
  7. Re-cover with cling film & return to the freezer for at least 3 hours
