
My children had the sublime privilege of attending YiaYia Irene’s play school as toddlers. Luckily for us, this wonderfully kind & charismatic woman has remained in our lives, continuing to spread her unique brand of wonder & warmth to our kids who simply adore her. YiaYia brought this wonderful loaf to our home for a lunch we hosted & it was such a hit, I just had to have the recipe! Serve it warm with some soft butter & you will be in heaven!
Ingredients
- 1 cup self raising flour
- 2/3 cup parmesan cheese, grated
- 100g feta cheese, chopped
- 2 tbs mint, chopped
- 1 cup olives, pitted & chopped
- 4 eggs, lightly beaten
- 80g butter, melted
- 1/4 tsp black pepper, crushed
Method
Preheat your oven to 180°c
- Lightly grease a 26cm loaf tin & set aside
- Sift flour into a large bowl
- Add the cheeses, mint, olives & pepper
- Stir in the eggs & butter, mix well
- Pour the batter into the loaf tin, spread evenly
- Bake for 35-40 minutes until golden brown & cooked through
- Turn on to a wire rack & allow to cool
