
This is a perfect cake to make with the kids! It’s delicious, simple and very, very, easy! I made this for a recent bake sale at the kids school and they had so much fun helping me make it…. smarties were of course harmed in the making of this cake.
Ingredients
For the sponge
- 3 large eggs
- 2¼ cup plain flour
- 1½ cups sugar
- 3 tsp baking powder
- 1 tsp salt
- ½ cup butter
- 1¼ cup milk
- 1 tsp vanilla
- ½ cup mini chocolate chips
For the icing
- 500g icing sugar
- 100g butter , softened
- 2-3 tbs milk
- 1 tsp vanilla
- Smarties to decorate
Method
Preheat the oven to 170°c
- Mix all ingredients ( except chocolate chips) in a large bowl ( I used my Kitchen Aid Free Standing Mixer) on a low speed, scraping the sides constantly
- Once incorporated, beat on a high speed for 3 minutes
- Stir in the chocolate chips and pour the batter into 2 prepared & lined 23 cm cake tins
- Bake for 25- 30 minutes until golden brown and a toothpick inserted comes out clean
- For the icing, mix all the ingredients on a low speed until well incorporated. Add more milk or icing as needed to either thin out or thicken the icing.
- Decorate with smarties! Have fun!
Please could you let me know what chocolate chips you used? Yours were beautifully peppered throughout the sponge but the ones I usually use are too heavy and all fall to the bottom.

Woolies has a range of really tiny dark chocolate chips. They’re about 1/3 size of the regular ones and therefore won’t sink! Toss them in a little flour before putting them in the batter as an extra precaution.
Pardon my ignorance I am a complete novice baker. how do you 1/2 cup butter? Do you melt it completely and measure 1/2 cup of liquid butter or is do measure the soft solid butter?
Most bricks of butter will come with easy to follow measurement guides ( grams and cup) printed on the wrapping. But as a quick guide 1 cup of butter is roughly equal to 250g and 1/2 cup 125g. Happy baking!
