A friend recently asked me to bake her a birthday cake for a small dinner party she was hosting. I was a bit daunted by the prospect but she is a dear friend so I was happy to oblige. I decided on a simple, elegant vanilla sponge and iced it with a Nutella Frosting. My friend is Nutella mad even going as far to offer her guests personalised jars of the divine paste as her wedding favours… there really was no other option! This cake looks really effective as a 4 layer cake, so if you have the inclination i.e patience halve the cakes before sandwiching them with the Nutella frosting.


For the sponge

  • 3 large eggs
  • 2¼ cup plain flour
  • 1½ cups sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • ½ cup butter
  • 1¼ cup milk
  • 1 tsp vanilla extract

For the Nutella frosting

  • 750g icing sugar
  • ½ cup ( 125g) Nutella
  • 2-3 tbs milk


Preheat the oven to 175°c

  1. For the sponge , mix all ingredients in a large bowl ( I used my Kitchen Aid Free Standing Mixer) on a low speed, scraping the sides constantly
  2. Once incorporated, beat on a high speed for 3 minutes
  3. Once smooth, pour the batter into 2 prepared & lined  20cm cake tins
  4. Bake for 30-35 minutes until golden brown and a toothpick inserted comes out clean. Set aside and allow to cool completely before frosting
  5. For the Nutella frosting, mix all the ingredients on a low speed until well incorporated. Add more milk or icing as needed to either thin out or thicken the frosting
  6. Use 2-3 heaped tablespoons of frosting to sandwich each layer before using the remainder to frost the top and sides
